Chef Paco's journey began at 18, starting as a dishwasher for Wolfgang Puck, driven by the need to support his family. His passion for cooking grew during his 13-year tenure at Patina Restaurant Group, notably at the Walt Disney Concert Hall. After international experience at a 3-Michelin-star restaurant in San Sebastián, Paco returned to LA and climbed the ranks, becoming Executive Chef at LA Cha Cha Chá in 2021. His success led to the opening of two more restaurants, Loreto and Mariscos Za Za Zá, establishing him as a leader with three thriving establishments.
