After college, Sathia moved from Cambodia to the United States, growing up in Long Beach, California. He attended the Culinary Institute of America in Hyde Park, New York, and gained experience at places like Untitled at the Whitney and Felix Trattoria before joining Pasjoli's opening team under Dave Beran. Subsequently, he contributed to Union in Pasadena and became part of the Park Hospitality team (Lowboy, Bar Flores, Wolf and Crane, and Donna's).
