Zach Liporace, a self-taught baker and former TV producer, began making bagels in 2016, aiming for a chewy and fresh, NYC-style bagel with less density. In 2017, he founded Pop's Bagels in honor of his late grandfather, Pop. Initially serving at pop-ups, events, and Smorgasburg, Zach opened his first store in 2020. Since then, he's expanded his offerings, including a gluten-free bagel, and currently operates four LA stores, with plans for further expansion in 2024.
